Sweet potato mountain loaded with all my favorite taco fixings 🙌🏼
We’re talking a juicy ground meat combo (chicken + beef) seasoned with Trader Joe’s chili lime seasoning, layered over sliced Japanese sweet potato and piled high with homemade pico + guac, beans, corn, and a generous scoop of creamy Greek yogurt. Finished with a little salsa for that perfect hint of sweetness.

Easy, customizable, and one of those meals that feels extra without actually being extra.

INGREDIENTS (1 serving)
• ~4 oz Japanese sweet potato (about ½, sliced and layered)
• 4 oz cooked ground meat (chicken + beef mix)
• 1–2 tsp Trader Joe’s chili lime seasoning
• 2 tbsp black beans
• 2 tbsp corn
• 4 oz low-fat Greek yogurt
• 2 tbsp pico de gallo
• 2 tbsp guacamole
• 1 tbsp salsa

DIRECTIONS
Slice and cook sweet potato (roast at 400°F / 200°C ~25–30 min or microwave until soft), then layer onto plate as your base.
Brown ground meat in a skillet, season well.
Pile everything on top—meat, beans, corn, and all the toppings. Go big on the yogurt 🙌🏼

NOTES
• Japanese sweet potatoes are a little sweeter + denser = elite base
