High protein Buffalo Dip

When I think about high protein recipes in my line up, it’s usually thanks to a few top contenders – Chicken breast, Greek yogurt and cottage cheese. All high protein, potentially low fat when you go for 0 or 2% milk fat dairy and all incredibly versatile in recipes. We’ll call this recipe the ultimate trifecta because this one has it all.

I swapped out cream cheese and shredded mozzarella that’s traditionally used in dips and replaced it with whipped cottage cheese for that creamy flavor without the added saturated fat. Start this recipe by whipping your cottage cheese. I made mine using a hand blender but if you don’t have one you could also use a blender or food processor until cottage cheese is smooth and creamy.

You can use any buffalo sauce but i recommend Primal Kitchen. Their ingredients are high quality, gluten free, free from artificial sweeteners and use whole food ingredients. their buffalo sauce specifically is a staple in our kitchen and frequently sold in bulk at Costco.

Serve this as a traditional dip along side fresh crunchy veggies or chips. This is perfect for a party app, high protein snack or a great lunch option. Or spoon it over a baked sweet potato for as to balanced dinner.

Ingredients

  • 3 cups shredded chicken breast
  • 1 cup low fat cottage cheese (I love Kalona)
  • 1 cup low fat Greek yogurt
  • 1 cup Primal kitchen Buffalo sauce
  • 1 teaspoon salt
  • 1 teaspoon garlic salt
  • 1 bunch green onion, diced
  • Veggies and dippers of choosing (I love carrots, bell pepper and Siete chips)

Directions

  • 1. Preheat over to 400.
  • 2. Add cottage cheese to a large mixing bowl and using a hand immersion bender, blend until smooth and creamy. (Alternatively you could use a blender or food processor and add to the bowl when smooth and creamy).
  • 3. Add Greek yogurt, buffalo sauce, salt, garlic powder and mix well.
  • 4. Add chicken and mix well.
  • 5. Transfer to an 8×8 baking dish. Bake for 10 minutes.
  • 6. Switch oven to broil and watch carefully for two minutes to firm a thicker layer on top before removing from oven.
  • 7. Allow to cool for a few minutes. Top with green onion and serve with dippers of choice.
