You really do learn something new every day — like the fact that pumpkin is technically a fruit! Because it grows from a flower, it lands squarely in the fruit family… which honestly feels fitting for this recipe. These pumpkin truffles are the kind of “hostess gift” you bring instead of flowers — equally thoughtful, way more delicious, and totally on-brand for fall.

They’re a cozy balance of sweet and lightly savory: the pumpkin brings warm autumn vibes without being overpowering, the banana adds natural sweetness, and the maple syrup ties everything together. Add chocolate chips (dark for a deeper pumpkin flavor or white chocolate for more sweetness) and you’ve got a perfect no-bake treat.

These come together quickly, chill beautifully, and deliver that soft cookie-dough truffle texture we all love. Perfect for parties, lunchboxes, or your “I need something sweet but still healthy” moments.

Ingredients

1.5 cups gluten-free oats

2 teaspoons pumpkin pie seasoning

1/3 cup vanilla protein powder (I used Orgain Simple)

2 tablespoons ground flaxseed

1/4 teaspoon salt

1/4 cup sunbutter (or any creamy nut butter)

1/2 cup pumpkin purée

1/2 cup mashed banana (about 1 medium banana)

2 tablespoons maple syrup

2 tablespoons chia seeds

1/4 cup + 3 tablespoons water

1/4 cup chocolate chips (dark or white)

Directions

Add oats, flaxseed, protein powder, pumpkin pie seasoning, and salt to a high-speed blender. Blend until you get a fine, flour-like texture.

In a large mixing bowl, combine pumpkin, sunbutter, mashed banana, maple syrup, water, chia seeds, and chocolate chips. Stir until fully combined.

Add the dry “flour” mixture into the wet ingredients and mix until it forms a soft cookie-dough-like batter.

Chill the mixture for 30 minutes to firm up. Line a tray with parchment paper.

Using a cookie scoop, form truffles and place them onto the tray.

Refrigerate for 1 hour. Serve chilled. Store leftovers in an airtight container in the fridge.
