High-protein, fiber-rich, packed with flavor, and almost no chopping required!

Some recipes are special because of how they taste. Others are special because of the memories they bring back. Every once in a while, you get both.
Trader Joe’s jarred bruschetta has a special place in my heart because it was one of my sister’s favorite things. Whenever I use it in a recipe, I inevitably find myself telling my kids stories about her.
I love that something as simple as an ingredient can create those moments. What starts as making dinner becomes an opportunity to share a memory, tell a funny story, and give my kids another little piece of someone who means so much to me.
And this particular dinner? It turned out so good that I knew I had to share it.
Tender chicken seasoned with Trader Joe’s Aglio Olio, crispy roasted broccolini, and warm cannellini beans come together for a delicious, satisfying sheet pan meal. Everything gets topped with Trader Joe’s bruschetta, freshly grated Parmesan, and a squeeze of lemon.
The combination is incredible. The garlicky seasoning, sweet and tangy tomatoes, savory Parmesan, and bright lemon complement one another beautifully.
And the preparation couldn’t be much easier.

The best part? Almost no chopping required. We’re talking a couple of sheet pans, a few pantry staples, and about 30 minutes from start to finish.

Sheet Pan Bruschetta Chicken with Crispy Broccolini & White Beans
Servings: 6
Prep Time: 5–10 minutes
Cook Time: 15–22 minutes
Total Time: Approximately 30 minutes
Ingredients
● 2 lb boneless, skinless chicken tenderloins
● 2 (8 oz) bags broccolini (16 oz total)
● 1 (15 oz) can cannellini beans, drained and rinsed
● Avocado oil cooking spray (approximately 1 teaspoon oil total)
● 2–2½ tsp Trader Joe’s Aglio Olio Seasoning Blend, divided
● ¾ cup Trader Joe’s jarred bruschetta, plus a little of the liquid from the jar
● ⅓ cup freshly grated Parmesan cheese (approximately 30 g)
● 1 lemon, cut into wedges
● Fresh basil, optional
Instructions
1. Preheat the oven.
Preheat oven to 425°F. Line two large baking sheets with parchment paper.
2. Prepare the chicken.
Pat the chicken tenderloins dry with paper towels. Remove any tough white tendons if desired.
Arrange the tenderloins in a single layer on the first baking sheet. Lightly spray with avocado oil cooking spray and sprinkle with approximately 1½ teaspoons Trader Joe’s Aglio Olio seasoning. Toss to coat evenly.
3. Prepare the broccolini.
Place the broccolini on the second baking sheet. Lightly spray with avocado oil and sprinkle with the remaining Aglio Olio seasoning. Toss to coat and spread into an even layer, leaving room between the stalks.
4. Begin roasting.
Place both sheet pans in the oven and roast for approximately 8 minutes.
5. Add the cannellini beans.
Meanwhile, drain and rinse the cannellini beans. Pat dry with a paper towel.
After the chicken has roasted for approximately 8 minutes, scatter the beans around the tenderloins. Return the baking sheet to the oven.
6. Finish roasting.
Continue roasting until the chicken reaches an internal temperature of 165°F, approximately 12–18 minutes total, depending on thickness. Begin checking around 12 minutes to avoid overcooking.
The broccolini may need 18–22 minutes total. Allow it to continue roasting until the florets have crispy, browned edges and the stalks are tender.
7. Add the bruschetta.
Remove the chicken from the oven and allow it to rest for 3–5 minutes.
Spoon the Trader Joe’s bruschetta directly over the warm tenderloins. There’s no need to heat the bruschetta separately!
Toss the warm cannellini beans with 1–2 tablespoons of the liquid from the bruschetta jar to give them a little extra flavor and moisture.
8. Finish and serve.
Divide the chicken, cannellini beans, and roasted broccolini among six plates.
Sprinkle with freshly grated Parmesan and finish with a generous squeeze of fresh lemon juice.
Garnish with fresh basil if desired.
Enjoy!
Tips for the Best Bruschetta Chicken
Give the Broccolini Room to Roast
If you’ve ever wondered why restaurant vegetables get those wonderfully crispy edges, spacing is part of the secret.
Spread the broccolini across its own baking sheet, giving the stalks plenty of room. This allows moisture to evaporate and helps the florets develop that slightly charred, delicious texture.
Keep an Eye on the Chicken
Chicken tenderloins are naturally lean and cook relatively quickly.
Because they vary in thickness, I recommend checking the internal temperature after approximately 12 minutes rather than relying entirely on the clock.
The goal is juicy, tender chicken that reaches 165°F without spending unnecessary extra time in the oven.
If your tenderloins have a thick white tendon running through them, you can remove it before cooking for a more tender bite.
Add the Bruschetta After Baking
One of the things that makes this dish so delicious is the contrast between the warm, savory chicken and the bright tomato bruschetta.
Rather than roasting the bruschetta along with the chicken, spoon it over the top just before serving.
The chicken gently warms the tomatoes while preserving their texture and flavor.
Don’t Skip the Lemon!
The fresh lemon juice might seem like a small finishing touch, but it really brings the dish together.
Its acidity brightens the garlic, balances the richness of the Parmesan, and complements the tomatoes beautifully.
I like to bring the lemon wedges and Parmesan right to the table so everyone can finish their plate to their liking.
Save That Bruschetta Liquid
The flavorful liquid at the bottom of the jar is too good to waste!
Tossing a little with the warm cannellini beans creates a light, savory coating and helps tie the entire dish together.
Easy Substitutions and Variations
Chicken: You can substitute boneless, skinless chicken breasts cut into strips. Adjust the roasting time based on thickness.
Broccolini: Regular broccoli florets work beautifully if broccolini isn’t available.
Beans: Great Northern beans are a good alternative to cannellini beans.
Parmesan: Freshly grated Parmesan offers wonderful flavor, but you can use the amount that suits your taste and macro goals.
Make it heartier: Serve the chicken, vegetables, and beans over brown rice or quinoa for additional carbohydrates and fiber.
Meal Prep and Storage
This recipe is a great option for preparing lunches or dinners ahead of time.
Store the cooked chicken, broccolini, and cannellini beans in an airtight container in the refrigerator for up to 3–4 days.
Keep the bruschetta separate until you’re ready to eat.
When serving, reheat the chicken and vegetables until hot, then top with bruschetta, Parmesan, and fresh lemon juice.
Nutrition & Macros
This recipe combines lean protein from chicken tenderloins with fiber from cannellini beans and broccolini.
Using approximately one teaspoon of avocado oil for the entire recipe keeps the added oil minimal while still helping the vegetables roast beautifully.

A Little More Than Dinner
I often talk about how food can nourish our bodies, but I also love how it can connect us to people and memories.
I never know exactly which story about my sister will come up when I open a jar of this bruschetta.
Sometimes it’s something funny. Sometimes it’s just a little memory I want my kids to know.
Either way, I’m grateful for those conversations.
And now this simple weeknight dinner has become another way to keep those memories close.
Good food, meaningful memories, and a meal that makes getting dinner on the table a little easier. That’s something worth sharing.
