- 170 g (¾ cup) nonfat plain Greek yogurt
- ½ scoop vanilla protein powder
- 1 teaspoon sugar-free cheesecake pudding mix
- ½ teaspoon vanilla extract
- ¼ teaspoon butter extract
- Pinch of salt
Toppings
- 1½ tablespoons chopped roasted peanuts
- 1½ tablespoons dye-free rainbow jimmies
- 1½ tablespoons chocolate chips
- ¼ teaspoon coconut oil
Instructions
- Line a baking sheet or large plate with parchment paper.
- Slice the bananas into bite-sized coins and freeze for 20–30 minutes.
- In a small bowl, whisk together the Greek yogurt, vanilla protein powder, cheesecake pudding mix, vanilla extract, butter extract, and salt until smooth and creamy.
- Dip each frozen banana slice into the cheesecake coating, coating both sides, then place onto the prepared baking sheet.
- Melt the chocolate chips with the coconut oil in 15-second intervals, stirring until smooth.
- Drizzle each banana bite with chocolate, then immediately sprinkle with chopped peanuts and rainbow jimmies so the toppings stick to the chocolate.
- Freeze for 2–3 hours, or until firm.
