🎃 Pumpkin Cheesecake Bars (Gluten-Free, No Bake)

If pumpkin pie and cheesecake had a baby who also cared about macros… this would be it. These Pumpkin Cheesecake Bars are cozy, creamy, lightly sweet, gluten-free, no-bake, and decadent enough to win the dessert category at Thanksgiving. Greek yogurt gives the filling the perfect set, the crust stays firm without heaviness, and the warm pumpkin-spice flavor hits all the cozy fall notes.

🛒 Ingredients (Half Batch — 8×8 or 9×9 Pan)

Crust

1 box Pamela’s Gluten-Free Graham Crackers, crushed

4 tablespoons refined coconut oil, melted

2 tablespoons maple syrup

Pinch of salt

Pumpkin Cheesecake Layer (Greek yogurt required for structure)

24 oz Greek yogurt

½ cup pumpkin purée

15g white chocolate pudding mix

1–2 tablespoons maple syrup

½ teaspoon pumpkin pie spice

¼ teaspoon cinnamon

¼ teaspoon vanilla extract

Optional Swirl & Toppings

1–2 tablespoons pumpkin purée + splash maple syrup + dash cinnamon (for swirl)

Finishing touch: drizzle of maple syrup or swirl of whipped cream + dusting of cinnamon

🎃 Instructions

Prep the pan – line an 8×8 (or 9×9) with parchment. Make the crust – combine crushed grahams + coconut oil + maple syrup + salt; press firmly into bottom of pan.

Make the cheesecake layer – whisk Greek yogurt + pumpkin + pudding mix + maple syrup + spices + vanilla; let thicken 5 minutes; spread over crust.

Optional swirl – drop small spoonfuls of the swirl mixture; gently marble.

Chill overnight for perfect slices. Slice + serve – cut into 12 squares (or 16 smaller); serve each in a clear dessert cup with mini spork for that elevated presentation.
