1 green onion stalk, sliced

¼ cup chopped cilantro

¼ cup chopped mint

For the Dressing

1 cup Greek yogurt

Juice of 1 medium orange

1 tablespoon coconut aminos

1 tablespoon almond butter

1 tablespoon maple syrup

1 teaspoon puréed garlic

1 teaspoon puréed ginger

½ teaspoon salt

Optional topping: toasted cashew pieces for added crunch

Directions

1. Prep the salad: In a large bowl, toss all salad ingredients until well mixed. Set aside.

2. Make the dressing: Add all dressing ingredients to a high-speed blender. Blend until smooth and creamy.

3. Assemble: Pour dressing over salad just before serving. Toss to coat.
