Calling all meal preppers! You’re going to love these high protein, flavorful meatballs that can be used in so many ways. They are easy to make and have great macros making them a perfect snack or ingredient as part of a meal.

We use these meatballs for the traditional pairing with sauce and noodles or veggie noodle and of course as the base for a tasty and melty meatball sub. (I take mine in an egg life wrap). But we also just grab them for snacking and hubby chops them up and makes an egg scramble or wrap. Baking these without any sauce on top is what makes them so versatile and easy to grab and eat on the go.
While meatballs are often made with panko as a binder, these meatballs use almond flour making these a great lower carb option. if you have a nut allergy or plan on packing these in a nut free school lunch, you could swap out the almond flour for panko or toss some gluten free oats in a blender for some oat flour.

The cottage cheese keeps these meatballs from drying out and also add an extra kick of protein. Y’all have heard me express my love for Good Culture culture cottage cheese so many times and this goes without exception.
I used to make this recipe with fresh herbs, but after giving dried a try I didn’t find much difference in the flavor so I’ve switched to dried for convenience. if you have the extra time and Ingredients on hand, you can sub fresh herbs and add additional for garnish.

Yield 36 meatballs
Ingredients
- 2lb ground turkey 93%
- 1 cup low fat cottage cheese
- 1 medium brown onion, chopped
- 2 garlic cloves, finely diced
- 2 eggs
- 2/3 cup almond flour
- 1/2 Tablespoon dried basil
- 1/2 Tablespoon dried parsley
- 2tsp dried fennel seeds
- 1/2 tsp ground pepper
- 1/2 tsp. Red chili flakes
- 2 tsp salt
Direction
1. Heat oven to 400. Line a baking sheet with parchment paper.
2. Add all ingredients to a large mixing bowl and combine. Place bowl in the refrigerator for 10-15 minutes to firm the mixture.
3. Using a two inch cookie scoop, spoon meatballs onto parchment paper. Bake at 400 for 18 minutes u til fully cooked through.
