Anytime we get an invite to watch a game at someone’s house I always bring buffalo chicken dip. It’s my go to yummy party food and is so simple to whip up. Lou recently requested I start making it for dinner because it’s high protein, filling and oh so yummy!

I grabbed the ingredients from the market to whip this up this week but as I walked in the door I found him in the kitchen draining the last of the green goddess dressing when I got hime. He was raving about how much he loves the dressing and the idea to combine the two formed.

Green goddess dressing is so flavorful and bold. Since plain shredded chicken doesn’t have much flavor this is a great way to throw a party in your mouth while hitting those protein goals.

I think this dip is great on baby bell peppers and even scooped the dip into living lettuce for some lettuce cups. I’m sure crackers or chips would also pair great. However, this dip is so versatile and could be added to spaghetti squash for a yummy pasta dish or grilled inside a tortilla as a yummy green goddess quesadilla.

Ingredients
- 6 cups shredded chicken breast (I boiled 4lb chicken breast to yield 6 cups)
- 1.5 cup shredded mozzarella
- 1 cup fresh basil leaves
- 1 cup fresh spinach leaves
- 1 cup low-fat Greek yogurt
- Juice of 3 lemons
- 1/4 cup olive oil
- 2 Tablespoons rice vinegar
- 2 cloves garlic
- 1 small shallot, roughly chopped
- 1/4 cup roasted and salted cashews
- 1/3 cup nutritional yeast
- 2.5 teaspoons salt
- Green onion, diced
- Dippers of choice: baby bell peppers, tortilla chips, crackers, etc.
Directions
- Preheat oven to 350.
- Add basil, spinach, lemon juice, olive oil, Greek yogurt, rice vinegar, garlic, shallot, cashews, nutritional yeast and salt to a high speed blender and blend until smooth.
- Add chicken, dressing and cheese to a large mixing bowl and mix well. Transfer to a 9×13 baking dish. Bake for 15 minutes.
- Garnish with green onion and serve along side your favorite dippers. I love baby bell peppers and siete tortilla chips.
