If youre headed to a party and looking for a fall recipe to bring, these pumpkin almond butter cups are a hit! I’d recommend doubling the recipe so you have a batch waiting for you at home because these ones are hard to resist!

Ingredients
- 2 cups quick cooking oats
- 1/2 cup almond butter
- 1/3 cup honey
- 1/4 cup pumpkin
- 6oz chocolate chips
- 2 tablespoon coconut oil
- Coconut oil spray
- Optional: sprinkles, shaved almonds or topping of choice.
Directions
1. In a mixing bowl, combine oats, almond butter, honey and pumpkin and mix well.
2. Spray a mini muffin tin with coconut oil spray. Alternatively, you could line with mini. Upscale liners.
3. Spoon a Tablespoon of pumpkin mixture into each muffin slot. Using your fingers or the back of the tablespoon, press down into pan. Put in fridge for ten minutes to help form.
4. In a microwave safe bowl, add chocolate chips and coconut oil. Microwave on low in twenty second intervals until chocolate is fully melted, about 2-3 minutes depending on the power of your microwave.
5. Apple 1/2 tablespoon of melted chocolate at a time over each cup. Return to fridge and let cool for an hour.
6. Pull out of fridge and let muffin tin sit for five minutes. Use a small knife to pop out each cup.
7. Enjoy immediately or store in fridge until ready to serve.
