If autumn had a flavor, it would be these little bites of creamy, pumpkin-spiced heaven.

Yesterday was opening day of the new Bee Cave Trader Joe’s, and in true Talk Macros to Me fashion, I was there bright and early — pumpkin coffee in hand and camera rolling. I even got to chat with the store captain, Ian, who shared his hands-down favorite Trader Joe’s item: the Ginger Snap Cookies. He lit up talking about them, and I knew instantly what I was making next.

So, inspired by Ian and the fall launch of our brand-new store, I whipped up these Pumpkin Cheesecake Bliss Bites — a creamy, protein-packed snack with a crunchy ginger snap coating.

Every single ingredient comes straight from Trader Joe’s, and they taste like a cross between pumpkin cheesecake and a bite-sized fall dream.

šŸ‚ Ingredients (All Trader Joe’s)

1 cup pumpkin purƩe

1 cup 2% low-fat Greek yogurt

2 scoops Orgain Organic Vanilla Protein Powder

2 cups Pumpkin Spice Toasted O’s

2 tablespoons maple syrup

2 teaspoons vanilla extract

2 teaspoons pumpkin pie spice

½ teaspoon salt

10 Ginger Snap Cookies, blended into crumbs

šŸ’” Gluten-free option: Use Simple Mills Graham Cracker Thins or your favorite GF ginger snaps instead of Trader Joe’s traditional ones.

🧔 Directions

Make the base: Add two cups of Pumpkin Spice Toasted O’s to a blender and pulse until ground. Pour into a bowl and set aside.

Mix the filling: In a large bowl, whisk together the pumpkin, Greek yogurt, maple syrup, vanilla, pumpkin pie spice, salt, and protein powder. Stir in the ground Toasted O’s and let the mixture sit for 15 minutes to firm up.

Form the bites: Line a baking sheet with parchment paper. Use a spoon to form one-inch balls, rolling them gently in your hands until smooth. Place each ball on the parchment-lined tray.

Chill: Refrigerate for about 20 minutes to let them set.

Coat in cookie magic: Blend the ginger snaps until finely ground and pour into a shallow bowl. Roll each chilled pumpkin ball in the cookie crumbs until evenly coated.

Set and serve: Return the bites to the fridge for another 10 minutes before serving.

These are best kept chilled — though fair warning, they disappear fast.
