Soft, warmly spiced, and topped with a Trader Joe’s grain-free granola crumble, they’re the perfect grab-and-go treat that feels indulgent but keeps your goals on track. Whether you’re meal-prepping for the week, packing lunchboxes, or needing something cozy with your morning coffee — this one’s a keeper.

🧔 Ingredients (makes 18 mini muffins)

1 cup pumpkin purƩe

1 cup low-fat cottage cheese

2 scoops FlavCity Vanilla Protein Powder ½ cup old-fashioned oats

2 tsp vanilla extract

2 tsp pumpkin pie spice

½ tsp salt

2 tbsp pure maple syrup

3 oz Trader Joe’s Grain-Free Granola (for crumble topping)

Preheat oven to 350°F. Lightly coat a mini muffin tin with coconut oil spray.

Make the crumble: Add the granola to a blender and pulse until you have a thick, crumbly texture. Pour into a bowl and set aside.
