The Recipe

1 package prepared Polenta (tube style)
1 lb 93% lean ground turkey
½ packet Taco Seasoning Mix
10 cherry tomatoes, quartered
½ cup fire-roasted corn (frozen)
½ cup shredded cheese of choice (Lite Mexican blend works perfectly)
Avocado oil cooking spray
Directions:
1. Preheat oven to 400°F.
2. Spray a sauté pan with avocado oil and brown the ground turkey for 4–5 minutes, breaking it up as it cooks.
3. Mix ½ packet taco seasoning with ½ cup water, then pour into the turkey. Cook for another 2–3 minutes until well coated.
4. Spray an 8×8 baking dish with avocado oil. Spread the polenta into an even layer using the back of a fork. Add the taco meat on top. Sprinkle with tomatoes, corn, and cheese.
