Ingredients

For the Dip:

3 cups shredded chicken breast

1 cup low-fat Greek yogurt

1 cup shredded pepper jack cheese

1/4 cup whipped cream cheese

8 oz salsa verde

4 oz can mild green chilis

1/2 teaspoon salt

1/2 teaspoon ground pepper

For the Pico de Gallo:

4 Roma tomatoes, diced

1 bunch cilantro, finely chopped

1/2 white onion, chopped

2. In a large Pyrex dish, combine chicken, salsa, chilis, yogurt, cream cheese, 1/2 the pepper jack, salt and pepper and mix well.

2 tablespoons lime juice

1/2 teaspoon salt

For Serving:

Tortilla chips or sliced bell peppers

Directions

1. Preheat oven to 400°F.

2. In a large Pyrex or baking dish, combine the shredded chicken, salsa verde, green chilis, Greek yogurt, cream cheese, HALF of the pepper jack cheese, salt, and pepper. Stir until well mixed. Sprinkle the remaining pepper jack evenly over the top.

3. Bake uncovered for 15 minutes until hot and bubbly.

4. While the dip bakes, prepare your fresh pico de gallo by combining the diced tomatoes, chopped cilantro, onion, lime juice, and salt in a mixing bowl.

5. Once the dip is done baking, let it cool for about 5 minutes. Garnish with your homemade pico de gallo. Serve warm with chips or fresh bell pepper slices for a lighter, low-carb option.
