Hawaiian Chicken Lettuce Wrap Bowls

A colorful, family-friendly dinner made with Kevin’s Natural Foods Hawaiian Style Chicken, roasted vegetables, rice and fresh toppings.

After spending three months abroad, one of the things I came home appreciating most was our grocery stores.

I’ve always loved a good shortcut—pre-cut vegetables, frozen rice, bagged salads and Trader Joe’s finds have been staples in my kitchen for years. But being away reminded me just how many great convenience products we have access to at home.

The key for me is finding shortcuts that still align with the way I like to feed my family.

That’s why I was excited to try Kevin’s Natural Foods’ new Hawaiian Style Chicken.

Instead of simply heating it and calling it dinner, I turned it into an easy build-your-own meal with roasted vegetables, white rice, fresh pineapple, creamy avocado and crisp lettuce cups.

Everyone could make a bowl or lettuce wraps, and dinner came together with minimal effort.

One unexpected mom bonus? The chicken package doubled as a serving dish, which meant one less thing to wash. I’ll take every win I can get!

Ingredients

Sheet-Pan Vegetables

  • 2 zucchini, chopped into bite-size pieces
  • 1 red bell pepper, chopped
  • ½ red onion, chopped
  • Avocado oil cooking spray, about 1 teaspoon
  • Garlic powder
  • Onion powder
  • Salt

For Serving

  • 1 package Kevin’s Natural Foods Hawaiian Style Chicken
  • Cooked white rice
  • Fresh pineapple, chopped
  • 1 avocado, diced
  • Green onions, sliced
  • Living lettuce leaves

Optional toppings:

  • Sesame seeds
  • Lime wedges
  • Sriracha or chili sauce

Instructions

Preheat the oven to 425°F.

Arrange the zucchini, bell pepper and red onion on a large baking sheet. Lightly coat with cooking spray and season with garlic powder, onion powder and salt.

Roast for approximately 20 to 25 minutes, stirring halfway through, until the vegetables are tender and lightly browned.

Prepare the rice according to the package instructions.

During the final five minutes of the vegetables’ cooking time, prepare the Hawaiian Style Chicken according to the package directions.

Chop the pineapple, dice the avocado and slice the green onions.

Serve everything build-your-own style with rice and lettuce cups. Each person can make a Hawaiian chicken bowl, lettuce wraps or a little of both.

Family-Friendly Tip

I kept the fresh pineapple separate instead of roasting it because my kids weren’t sure how they would feel about the texture of warm pineapple.

Serving all the ingredients individually made it easy for everyone to choose what went into their own bowl or wraps—which is often the secret to making one dinner work for the whole family.

Easy Substitutions

Use jasmine rice, brown rice, cauliflower rice or quinoa as the base.

You can also add edamame, shredded cabbage, cucumber, sesame seeds or a squeeze of fresh lime.

Why This Dinner Works

It’s colorful, customizable and easy enough for a busy weeknight. The prepared chicken does most of the heavy lifting, while the roasted vegetables and fresh toppings make the meal feel balanced and homemade.

Sometimes dinner doesn’t need to be completely from scratch. It just needs a really good shortcut.

Kevin’s lists one 5-ounce serving of the Hawaiian Style Chicken as 160 calories, 20g protein, 13g carbohydrates and 2.5g fat, with about three servings per package.

Skip the rice and serve everything in lettuce cups:

Macro note

Macros will vary depending on the amount of rice, pineapple and avocado added to each bowl. For the most accurate numbers, weigh those ingredients while assembling your individual serving.
