Buffalo Chicken Lettuce Wraps (High-Protein & Macro-Friendly)

When you’re craving the bold, spicy kick of buffalo chicken but don’t want to be weighed down by heavy wings or greasy sandwiches, these Buffalo Chicken Lettuce Wraps are the answer. They’re quick, light, packed with protein, and perfect for lunch meal prep or an easy weeknight dinner.

Ingredients

For the Buffalo Chicken Wraps

2 cans Kirkland chicken breast (14 oz each, drained)

¼ cup Primal Kitchen Buffalo Sauce

3 stalks celery, diced Shredded carrot, for topping

Living lettuce (or any sturdy leaf like butter lettuce)

Drizzle of High Protein Cottage Cheese Ranch (recipe below)

For the Cottage Cheese Ranch

1 ½ cups Kalona low-fat cottage cheese 2 tablespoons Trader Joe’s Ranch Seasoning (or similar) 1 tablespoon vinegar 1 teaspoon salt

Directions

Make the Ranch

1. Add cottage cheese, ranch seasoning, vinegar, and salt to a blender. Blend until completely smooth and creamy. Store in a sealed jar in the fridge for up to 5 days.

Make the Wraps

1. Wash and dry your lettuce leaves so they’re crisp and ready to hold your buffalo chicken filling.

2. In a bowl, combine the drained chicken, diced celery, and buffalo sauce. Mix until well coated.

3. Scoop the chicken mixture into each lettuce leaf. Drizzle generously with cottage cheese ranch.

4. Sprinkle shredded carrot on top for extra crunch and color.
